Fruit Pizza


Last night, my parents had pizza night over at their house. My dad is big into tailgating for the Arkansas Razorback football games, so he was testing grilled pizza recipes for the upcoming football season. I offered to bring a dessert, so I went along with the pizza theme.

This recipe is super easy, as well as fast and fun to put together. A good tip is to buy the apple slices that are already sliced and packaged into little bags. They won't brown, even after a few days if you happen to have left-over pizza.

Fruit Pizza
Adapted from Pillsbury

1 roll (16.5 oz) Pillsbury® refrigerated sugar cookies
1 package (8 oz) cream cheese, softened
1/3 cup sugar
1/2 teaspoon vanilla
Fruit of your choice

1. Heat oven to 350°F. Grease 12-inch pizza pan or spray with cooking spray. In pan, break up cookie dough; press dough evenly in bottom of pan to form crust.
2. Bake 16 to 20 minutes or until golden brown. Cool completely, about 30 minutes.
3. In small bowl, beat cream cheese, sugar and vanilla with electric mixer on medium speed until fluffy. Spread mixture over cooled crust. Arrange fruit over cream cheese.
